Chef Nobu Fukuda shows us in exquisite style that Japanese cuisine is so much more than simple sushi, teppanyaki, teriyaki and tempura. His “tapas” concept is art, with nouveau combinations like chilled edamame soup with crème fraîche and caviar; shinshu mushi, an intoxicating broth of mushrooms, sea bass and green-tea soba noodles; and tako-tomato salad with wasabi aioli, citrus and vintage olive oil centered by micro arugula and grape tomatoes. Paired with tastings of sake, wine and champagne, it’s a feast fit for an emperor.
